monochrome

We got the last of our spring farmboxes last week. Sad because gone are the spring veggies, like delicate salad mixes and pea shoots, but happy because in come the tomatoes! the eggplants! the basil! of summer.

We had fava beans for the first time. They are big tender beans that taste like peanuts to me. The pods are very spongy and cozy. We had them smashed up with fresh peas and mint, and paired with this asparagus ribbon salad. Recipe for Jamie Oliver's smashed peas and fava beans below..

Incredible smashed peas and fava beans on toast (from Jamie Oliver's jamie at home):

1 pound peas in their pods
1.5 pounds fava beans in their pods
small bunch of fresh mint
sea salt and freshly ground black pepper
extra virgin olive oil
2 oz grated pecorino cheese (we used parmesan because we had it)
juice of 1 lemon
1 clove garlic, rubbed on toasted sourdough bread
fresh mozzarella

In pestle and mortar, bash up the peas and fava beans and mint with a little salt. Mash in some olive oil, stir in the pecorino, add lemon juice. Taste, then season as needed. Spread on toast and top with mozzarella. Or toss with pasta like a pesto.
